Crushed gently and dropped by gravity into 1.5 ton bins, cold soaked 48 to 72 hours, then inoculated with a variety of yeasts, hand punched and pressed directly to barrel where the wine finished both primary and secondary fermentations.  After 12 months of barrel aging the best barrels of the separate lots of Grenache, Counoise and Mourvedre were combined and allowed to mingle in barrel for an additional 4 months before bottling at 16 months.

Tasting Notes


Dark fruit and mulled spice notes on the nose, including currant and dried cherries, followed by hints of bacon and figs. The palate shows brighter fruit notes followed by smoke and white pepper. Pair with dates with goat cheese and bacon.
