Crushed gently and dropped by gravity into 1.5 ton bins, cold soaked 48 to 72 hours, then inoculated with a variety of yeasts, hand punched and pressed directly to barrel where the wine finished both primary and secondary fermentations.
This wine shows bright purple fruit on the nose with notes of black pepper, violets, plum and anise. Balanced tannins on the palate with notes of bold blue fruit, including blueberry & boysenberry. This wine rewards with a long finish and plush mouth feel. Pair with peppercorn steak.
