Crushed gently and dropped by gravity into 1.5 ton bins, cold soaked 72 hours, then inoculated with a variety of yeasts, hand punched and pressed directly to barrel where the wine finished both primary and secondary fermentations.
An unusually cool summer and fall resulted in extended hang time for the grapes, creating balanced wines with a bright natural acidity and ripeness without the weight of heavy alcohol.
Pie spices, huckleberry and leather on the nose, with caramel, raspberries and ripe plums, a bit of toasty barrel smoke giving way to lucious, velvety tannins and a length finish.
