Cooperage

50% new French oak with the remaining half older French oak.  Select barrels from the best forests of Taransaud, Demptos, Vicard, Radoux and Roberts & Son coopers.

Winemaking

Crushed gently and dropped by gravity into 1.5 ton bins, cold soaked 72 hours, then inoculated with a variety of yeasts, hand punched and pressed directly to barrel where the wine finished both primary and secondary fermentations.

Vintage

Glorius vintage with wonderful weather conditions for normal production of low tonnages equaling delicious, balanced and succulent fruit.

History

The 2005 vintage scored above 90 points in all four national publications to whom it was submitted.

Tasting Notes

Elegant with spiced cherry, blackberry and boysenberry mingling pleasingly and lingering seductively with a hint of oak, smooth chocolate and mocha on the structured tannins and fine-grained finish.

2006 Cabernet Sauvignon: Wine Enthusiast

This stylish Cab is loaded with black olive and black fruits, all with a leafy edge. Still young tannic and a bit hard, it has good clean, varietal character and a good length.
